Based off of my favorite hummus from Whole Foods
Kumquaty Tapanade Hummus
1/2 cup dried chick peas soaked til soft (or 1 15 oz can)
1/4 cup green olives
1/4 cup artichoke hearts
1/4 cup red roasted peppers
1/4 cup roasted garlic olive oil*
2 tbs lemon juice
2 tbs green olive jar “juice”
Process chick peas, green olives artichoke hearts, re roasted bell pepper, olive juice, lemon juice til smooth. While food processor is running slowly add olive oil to emulsify.
* How to make roasted garlic olive oil: in a small sauce pan add a whole bulb of garlic (peeled) and 2 cups of olive oil. put on stove on very low for 1 hour.
