1/2 c dried black beans soaked (or 1 can of salt free 15 oz black beans)
1/2 avocado (omega-3)
1/4 C. molasses (iron, calcium)
1 tsp vanilla
1 tsp cinnamon (good for blood sugar)
1 tsp instant coffee
1 tbs chia (omega-3)
6 tbs cacao powder
1/2 tsp baking powder
pinch sea salt
handful semi sweet chocolate chips
Preheat over to 350 degrees. Put everything in the food processor except pecans and chocolate chips process til smooth. Fold in pecans. Pour into greased glass pie dish. Sprinkle with chocolate chips. Bake for 30-45 mins. Cool. Enjoy! This turned out really good might have even been able to cut back on more of the molasses. plenty sweet.
Update: brought a few sample to work not thinking that they would like it at all considering how low in sugar it is and surprise they liked it 🙂 yay!
